It is that time of the year again, you know- when you are tempted to drive to McDonald’s to get that minty, green, delicious St. Patrick’s Day themed shake that everyone goes crazy over! I’m guilty of gulping one down in under ten minutes, and wishing I had ordered a larger size. How can you not?
But this year is different. This year, I would rather save those calories for something healthier. Luckily, I can still enjoy the minty goodness of the perfect peppermint- vanilla blend, which is sure to cure any sweet tooth cravings! And now you can too- with this yummy recipe below!
2 frozen bananas
4 ice cubes
1 tsp vanilla extract
1 1/2 C fresh baby spinach
1 drops of peppermint oil
1 tbsp almond butter
3 cups unsweetened almond milk
Make sure to put the peppermint oil in the blender before anything else. That way if you accidentally put more than one drop, you can stat over without wasting any of the other ingredients. 1 drop of peppermint oil is plenty.
Mix all ingredients in the blender. This recipe makes 4 servings (8oz).
Note- you may need to add extra almond milk, depending on the consistency you prefer.
